008: Garden Soup

Servings: 2

Ingredients

1/2 cup onion diced

1/2 fennel bulb sliced

1 stalk celery sliced

1 leek sliced

pinch of salt

2 cloves garlic

1 potato diced

1/2 cup green beans

4 cups vegetable stock

1 zucchini diced

15 oz can of cannelloni or white beans that have been rinsed

2 cups chopped kale

Season with salt and pepper if needed

Instructions:

1. In a pot, saute the 1/2 cup onion, 1/2 fennel bulb, 1 stalk celery sliced, leek sliced and add a pinch of salt.

2. Once they start to soften add 2 cloves garlic, 1 potato diced, 1/2 cup green beans and 4 cups of vegetable stock. Cook 10 minutes.

3. Add 1 diced zuchini, 15 oz. can of cennelloni or white beans that have been rinsed and 2 cups chopped kale.

4. Simmer 5-10 minutes and season with salt & pepper if needed.
