Time: 45 minutes
Servings: 3
1 red pepper
1 green pepper
1 red onion
300-400g firm tofu
1 can black beans
1 tbsp paprika
1 tsp ground coriander
1/2 tsp garlic granules (or 2 crushed cloves)
pinch chili flakes
2 tbsp tamari
1 tbsp olive oil
1 lime (juice)
pinch salt & pepper
8 tortillas
1. Drain the tofu block as per packet instructions and slice the peppers, onion and transfer to large mixing bowl.
2. Crumble the tofu block in your hands straight into the mixing bowl along with the black beans, spices, tamari, olive oil, lime juice, salt, pepper and mix.
3. Place onto a large baking tray, spread evenly and bake at 390 F for 30 minutes.
4. Serve into your tortillas and top with your favorite toppings.
