001: Pumpkin Chili

Time: 30 mins

Servings: 3

Ingredients

1 cup diced onion

1 cup diced bell pepper

1 can kidney beans (rinsed and drained)

1 can black beans (rinsed and drained)

1 can pinto beans (rinsed and drained)

1 can pumpkin puree

1/3 cup finely chopped walnuts

2 cups water or veggie broth

1 tbsp chili in adobo

1 tsp chili powder

1 tsp smoked paprika

1/4 tsp cinnamon

1 tsp salt

1/4 tsp black pepper

1/2 tsp cumin

Instructions:

1. Add all ingredients to a soup pot.

2. Bring to a boil then cover and simmer for 25 minutes.

3. Serve hot with vegan sour cream, cilantro and avocado. (And tortilla chips if ya want!)
