1 cup ground/blended oats
1 banana
1/3 baked sweet potato
A pinch of cinnamon for each pancake
1/2 cup water
Pam (or desired cooking spray, oil)
In blender, mix blended oats, banana, sweet potato, and water. Add more water or banana depending on the consistency you want.
Once you have the desired consistency, then you'll want to move it into a bowl.
With a skillet, spray your Pam and turn to a low heat for 1 min. After that, you can use a ladle to scoop the batter and add to skillet. I did smaller pancake sizes for my son and could make 5-7 pancakes with this recipe.
Add a pinch of cinnamon to each pancake in the skillet before turning over. After 4 mins I turned them over. Be cautious that the entire pancake is on your spatula before turning over to avoid breakage.
If you want a less mushy pancake you can cook longer on each side. I wanted more of a mushy consistency for my son so I cooked them a little less then I would desire for my own pancake.
There is room to play with the batter mix. You can throw in some cut up berries, cacao, flaxseed, etc. You'll just need to add a little extra banana, sweet potatoes, and water depending on how much extra ingredients you add to the mix.
Possible toppings: almond/peanut butter, berries, Log Cabin Sugar-Free maple syrup, Cinnamon, etc.
