3 garlic cloves
1 teaspoon Italian seasoning
1/2 cup water
1 cup quinoa
15 slices of portabella mushroom
1 bell pepper
1 onion
1 bunch of Basil
2 tablespoons Vegan Parmesan Cheese
1.Soak a cup of quinoa overnight and then rinse it. Put it in the blender with a garlic clove (I used 3), a teaspoon Italian seasoning and 1/4 cup water. Blend adding water until it is a think batter. (I added about 3 additional tablespoons)
2. Heat a cast iron skillet in an oven at 450 for 10 minutes. Pour in the batter and spread, bake for 20 minutes-mine took 15. The edges should be set but center still soft. Flip and bake 8-10 minutes. Put on your favorite topping. Recipe called for portobellos, onion and peppers. Bake 8-10 minutes until veggies are cooked. Top with basil and I added some vegan parm.
