006: Potato Nachos

Time: 30 minutes

Servings: 4

Ingredients

3 potatoes
1 tsp olive or avocado oil
light salt and pepper
1 can black beans
3 sweet peppers
2 green onion
Cashew Cream & Salsa

Corn(optional)

Instructions:

1. Preheat oven to 400 F .

2. Slice potatoes and lightly coat with olive or avocado oil.

3. Lightly salt and pepper. Bake until golden brown.

4. Top with rinsed and drained black beans, chopped sweet pepper, & sliced green onion. Sometimes I add corn.

5. Serve with cashew cream and salsa.
