Time: 30 minutes
Cashew Cream & Salsa
Preheat oven to 400 F .
Slice potatoes and lightly coat with olive or avocado oil.
Lightly salt and pepper. Bake until golden brown.
Top with rinsed and drained black beans, chopped sweet pepper, & sliced green onion. Sometimes I add corn.
Serve with cashew cream and salsa.
