051: Brocoli, Ginger & Coconut Soup

Time: 30 Minutes

Servings: 4

Ingredients

1 head broccoli cut into florets
1 medium onion chopped
2 cloves garlic chopped
1 inch ginger, fresh finely chopped
1 ½ cups coconut milk canned
2 cups of vegetable stock
1 tablespoon coconut oil

Instructions:

1. Heat the coconut oil in a large saucepan on medium heat.

2. Add the onion, ginger and garlic and cook for 3-4 minutes until soft.

3. Add the broccoli, coconut milk and stock. Bring to the boil, then simmer for 5-18 minutes until the broccoli is soft.

4. Blend with a hand blender.
