2 Tablespoons extra virgin olive oil
1 clove garlic
1 carrot
1 sweet onion
3 sweet peppers
2 cups veggie broth
1 can of tri-bean blend beans
salt, pepper, and smoked paprika to taste
1. Heat up Extra virgin olive oil. Put in chopped clove garlic, chopped carrot, chopped sweet onion, and chopped sweet peppers. I let them heat up together until onions are more cooked through.
2. Add veggie broth and one can of tri- bean blend (or beans of you choice). Add Salt, pepper, and smoked paprika to taste. I let it boil then turn down to simmer at least a half hour but the longer the better!!!
